Simple Chicken Rice Casserole

Welcome to my new blog. I can't say I will be writing the most interesting, thought provoking ideas ever, but they are mine. My intention is to share with friends and family. If any of my words or projects inspire you, please feel free to comment and share your insight. I hope to write at least a few times a week or more often if I am moved to do so.


With the sun behind the clouds today and a cold drizzling rain that seemed to wash away all signs of summer, I felt like making something warm and comforting. I love this recipe for many reasons.

1. It reminds me of times when my mother would make a chicken and rice dinner when I was growing up. I loved when she made it. This recipe is different from her's, but the two main ingredients are still the same: Chicken & Rice!
2. It's soooo simple to make and requires no special skills whatsoever. Let's face it, these days I just don't feel like doing anything complicated that could turn into a disastrous waste of food and energy. I also like to "WOW" my husband and trick him into thinking I am the greatest cook ever . . . yea right!
3. It's cheap and we can have 2 meals out of it. I love having leftovers. It cuts the grocery bill down.
4. You can improvise with whatever vegetables that you have.

I took my inspiration from this recipe,( http://www.evernewrecipes.com/chicken-recipes/chicken-rice-casserole-recipe.html )and added my own "flavor" to it. I try to do that with most recipes I find to make them "my own".

Ingredients
1 c. uncooked rice
1 can cream of chicken soup
1 envelope Good Seasons Italian dressing mix
2 c. boiling water
1 c. frozen beans
1 c. chopped carrot
1/2 small onion
3 chicken breasts
3/4 c. shredded mild cheddar cheese

Instructions
Wash and drain rice.Mix soup, Italian dressing mix, and water in a 9 x 13 inch baking dish. Add rice, beans, carrot and onion. Finally lay chicken breasts into dish and cover it with foil. Cook for 1 hour at 350. Uncover after 1 hour and cook for 20 mins more. Sprinkle the cheese on top and put under broiler on low until cheese is melted. Enjoy!

*** I realized afterwards that I didn't like the amount of onion flavor. I will omit the onion next time.
